The old vines of this parcel produce a limited number of highly concentrated shot grapes. Handpicked, the harvest is carefully pressed and naturally fermented in oak. In view of preserving as much as possible the minerality characterizing Decelle-Villa Meursault, they only use 30% new oak and do not stir the wine’s lees. After 14 months in the cellars, the different casks are blended for a couple of weeks, before being gravity-fed into bottles.
Decelle Villa Meursault is a bright straw color and expresses notes of cake, almond and crisp apple. Pure and distinct, the palate displays good structure. It pairs well with asparagus, top quality fish and even foie gras. This offering can be aged in the cellar for up to 10 years.
Domaine Decelle-Villa is the love child of passionate winemakers Pierre-Jean Villa and Olivier Decelle. Villa, who had already established himself in classic producing regions of northern Rhône, had a dream to bring his wine making expertise to Burgundy. He met his soulmate in Decelle, saviour of Jean Faure in Saint-Emilion and Mas Amiel in southern France. They shared a common vision of vinification: to make great Chardonnay and Pinot Noir that reflects the great terroirs of Nuits-Saint-George in Burgundy.
This exciting new venture has proved a success due to the magnum of experience and knowledge from both men. As with all of Decelle’s ventures, the quality of soil is a vital ingredient to the quality of the wine, so the 3 hectares of land are all managed biodynamically.
