Wineries Of The Month: August 2021

We're back with August's featured wineries, from an experimental winery in New Zealand to a cosy family winery from Côte de Nuits with seventeenth-century cellars.

First up, we have Pazo Señorans, located in the Spanish town of Meis within the sub-zone of Val do Salnes, close to the sea on acidic, sandy soils created by the natural decomposition of the granitic bedrock below. The influence of Marisol Bueno and Javier Mareque on the founding and development of the DO Rías-Baixas and its primary variety Albariño can be traced back to their purchase in 1979 of an ancient 16th-century country estate, its kiwi orchards, and old-vine Albariño vineyards. Early on, they recognized the potential of Albariño and were instrumental in the creation of the DO just a decade after they arrived in Meis.

Mostly grown on pergolas, their Albariño is hand-harvested into small crates in September and quickly transported to the winery to be crushed and pressed. Separate vinifications are conducted by plot in temperature-controlled stainless steel tanks.  To retain freshness, malolactic fermentation is blocked, and the wine is allowed to age on its lees for at least four months with frequent bâtonnage. Bottled early each year following the harvest, it is an example of the fresh, crisp, and vibrant style that has defined the region. Wondering what to pair them with? Mt Difficulty

The story of New Zealand winery Mt Difficulty begins in the early 1990's with 'The Gang Of Four' - the owners of five newly planted vineyards in Bannockburn. Upon a handshake they decided to work together to produce wine under one label. This handshake bound the owners of Molyneux, Mansons Farm, Verboeket Estate and Full Circle until 2004 when Mt Difficulty Wines Ltd was officially formed, and the majority of the individual vineyards passed into the ownership of the company.

Their first vintage was produced in 1998 and was a Pinot Noir and Chardonnay, created under the Mt Difficulty label. Prior to this, the fruit had been sold to Gibbston Valley or Chard Farm. Matt Dicey came on board to help build Mt Difficulty a winery in 1998, and stayed on as head winemaker. In 2018 he completed his 20th vintage, expanding to aromatic white varieties and single vineyard expressions, yet always retaining Mt Difficulty’s signature style - Central Otago provides New Zealand’s only ‘continental’ style climate combined with unique soils ideally suited for growing Pinot Noir, Chardonnay, Riesling, Sauvignon Blanc and Pinot Gris. Looking for a brilliant biodynamic family winery? Domaine d’Ardhuy is located in the heart of Burgundy, France in the Côte de Nuits bordering the Côte de Beaune. It's also nestled in the Clos des Langres, which has been synonymous with exceptional wine since the monks of the Abbaye de Cîteau planted the first vineyards in the 10th century!  

The d’Ardhuy family has owned this estate for four generations perfecting the winemaking process, treating their wine with utmost respect of the terrain and cultivated in a traditional manner. Fermentation takes place traditionally in oak barrels with regular stirring of the lees at the end of the fermentation process resulting in exceptional wines, and naturally, all fruit is hand-harvested, destemmed, with no cold soaking nor enzymes added prior to fermentation. Now owned by several daughters of the originators, Gabriel and Elaine d’Ardhuy, they are determined to convert the property to sustainable viticulture and winemaking. The domain covers 38 hectares, producing eight Grand Cru, 14 Premier Cru, and 14 Village wines.
