This is the winery's emblematic wine. A wine that comes exclusively from our ecological estate Quinta San Diego. Each of the plots is hand-harvested and then the lees are fermented and aged separately in French oak barrels.
Spontaneous, controlled alcoholic fermentation.
At the end of the 10-month ageing with lees, a selection and "assemblage" is made. The entire production is bottled at the same time and stays at in the bottle at least 5 months before going onto the market. This wine is crafted to be consumed within 6 to 8 years, when it will display all its qualities.
Average annual production: 80,000- 90,000 bottles, 495 magnums (1.5 litres) and between 70 and 100 double-magnums (3 litres).
- Straw yellow colour with some golden tinges.
- Intense, suggestive notes of toast, spices and balsam, alongside aromas of white fruit, citrus, bitter herbs and flowers over a subtle, exquisite mineral background.
- Bold and palate-coating, showing a tight, concentrated complexity that will loosen over the next years. Full of richness and nuance, showing notes of tropical fruit, pomelo, bitter herbs, dry earth and white flowers. Great acidity and long, delicately bitter finish.
