The grapes are crushed and destemmed at 100%. Fermentation is started quickly (no pre-fermentation maceration). The extraction of aromas, tannins, color is natural (no enzyming, no forced extraction by excessive heating) and is done by punching down only. The vatting lasts about 10-12 days. Free run wine and first press are blended, settled and intoned. The Savigny is aged in barrels for 15% to 20% new. The oak in the barrels comes from the forests of the Allier, which provide an elegant aromatic touch. Maturing lasts about a year; the wine is bottled without fining, with very light filtration.
