Vinification: Slow pressing, cold settling, fermentation and aging in casks and concrete eggs for 19 months."Atypical white for the region, certainly a legacy of my stay in Alsace. Floral nose, ample and fresh mouth with a tangy attack then aromas of citrus fruits, exotic fruits, mirabelle plum. Goes well with shellfish, spicy dishes, saffron, white meats, exotic cuisine. To drink young, or to keep to let other more complex aromas develop."
