Grave di Stecca is a single vineyard Prosecco made by our favourite producer Nino Franco. The grapes are sourced from a walled-in (like a Clos in Burgundy) vineyard of the name same: 2.4 hectares in the commune of Valdobbiadene, situated at the foot of Mount Cesen. The wine is made slightly differently to the majority Prosecco Superiore. The base wine spends several months on in lees in tank with batonnage, until the spring when it goes through its secondary fermentation in an autoclave (sealed, pressurised tank) where it spends 30 days. The wine is then bottled given extended ageing before release.
