Ripe, poachingon-the-stove plums and damsons with a frisson of black pepper and dried thyme. And petrichor. Petrichor on the nose and the taste of cold rain on hot black rocks. Stunning minerality. It glitters in the mouth like mica embedded in coal. Such fine, refined, arching tannins. And then, on the end a little grace note of bitterness, kalamata olive with salted lemon peel, and it feels as if someone gently bit the back of your neck.
