  • 12:30pm – 1.15pm: Rare Champagne – Terra-cotta and beyond
    • By Winemaker:
    • Unlike other wine making processes which involves the usage of wooden barrels, clay vessels have been used to ferment and age wines instead. While these pots are an uncontested link to the past, they are also becoming a resource for the future of winemaking. Beyond the romanticism involved in borrowing ancient techniques, terra-cotta pots offer unique interactive properties with winethey pull out acidity, allow oxygen exchange, and provide superior insulation, among other benefitsthat are different from those of stainless steel, wood barrels, or concrete. These factors are capturing the attention of winemakers around the world and encouraging new scholarship.

    • 200 ha all told, split between the historical zones of St Drézéry and St Christol, and the newer appellation of Pic St Loup (La Closerie du Pic).  The Puech-Haut wines as they’ve been made so far seem to me to be the epitome of that ‘New World Languedoc’ style which appealed so strongly to outsiders in the 1990s, with deep, fleshy profiles, prominent acidity and lavish oak (some of the special cuvée wines have 24 months in new oak), but with discreet tannin profiles and hence smooth textures. The range includes a large number of occasional parcellaires.
