A typical Chablis to be drunk on its freshness. It goes well with food like Gougères and other crisp, cheesy nibbles. All kinds of raw shellfish, especially oysters. Simply cooked shellfish. Snails - or prawns - with garlic butter. Delicatessen. Seafood salads. Andouillette (local Chablis sausage made with tripe and served with chips!). Mustard Rabbit or other dishes with strong mustard-based sauces.
