“Terres de Berne is the quintessence of an elegant and flavourful Berne rosé, giving centre stage to fruitiness and freshness in the mouth. The grapes are harvested at night, then sorted and pressed directly (or macerated for a few hours depending on the plots), to enable us to select only the finest juices (first press and heart of press). Careful settling is followed by the reintroduction of filtered lees and fermentation at between 14 and 18°C to procure greater aromatic complexity in the final blend. The wine is then aged in vats on fine lees with regular stirring.”
