 Cèrvoles is a red wine from D.O. Costers of the Segre produced by the Cérvoles winery. It is a coupage of tempranillo, cabernet sauvignon and garnacha tinta
varieties.

The strains from which the Cérvoles grapes come were planted at the end of the 1980s. The vines grow with different orientations and exposures with regard to sunlight.

The land is located in the region of Les Garrigues and at an altitude of between 700 and 750 meters. The soils are loamy and loamy clay and display different levels of gravel.
The processes carried out in the winery with the Cérvoles grape are carried out at controlled temperatures between of 26º and 28º.
The winemaking is done in a traditional way, by applying délestages and pigeages with the aim of obtaining an optimal extraction of polyphenones.

Each variety undergoes the processes autonomously. The Tempranillo and the Grenache macerate for 20 days, while the Cabernet Sauvignon and Merlot varieties do so for 25 days.

Finally, Cérvoles stands for a year in fine-grain French oak barrels.

  • Cherry red, medium intensity, with garnet highlights.
  • Abundant, dense legs. Intense, pleasant aromas of over-ripened fruit with hints of wood, particularly smoked and balsamic notes. Aeration reveals predominantly mineral aromas, with hints of aromatic herbs, such as fennel, thyme and rock tea, as well as dried fruits and chocolate.
  • Sweet, unctuous mouth feel, with a great deal of volume, followed by well-balanced acidity and mature tannins. Very long finish with notes of nougat and wild fruits.
